We get a lot of requests for holiday recipes. But, why wait for a special reason to have something delicious? Our friend Don from the Murrieta Farmer’s Market gave us some juicy blood oranges and we definitely put them to good use. The markets here have already had hams on sale so here we go. Once again we show we can do just about anything on our Pacific Living Pizza Oven and soon we’ll actually be doing pizza!

 

Any Day Ham with Orange Apricot Glaze

Prep Time: 5 minutes

Cook Time: 2 hours at 350 degrees (177c)

Grill: Pacific Living Pizza Oven

Pellets: Lumberjack Pecan

 

Ingredients: Any Day Ham with Orange Apricot Glaze

  • 1 12 ½ lb. ham
  • 1 cup blood orange juice, about 8 oranges
  • 1 cup apricot jam or preserves
  • 2 Tablespoons horseradish mustard

Score the Skin on the Ham

Directions: Any Day Ham with Orange Apricot Glaze

Score the skin on the ham with a sharp knife, cutting from two directions to put a diamond pattern on it. This helps the fat melt and lets your seasoning and glaze in. You don’t need to cut very deep just through the skin. Now you are ready for the Pacific Living Pizza Oven.

Glaze: Whisk ingredients together until blended and set aside. The last 30 minutes of cooking brush on the glaze. Repeat this every 10 minutes until you are ready to pull the ham out of the oven.

Add Pellets or Wood Chips to the Smoke Box

 

Cooking Directions: Pacific Living Pizza Oven

To prepare the Pacific Living Pizza Oven for cooking: Turn on gas, open the door and press the igniter. You can hear and see the flame come on. Shut the door and set your temperature for 350 degrees (177c).

If you are going to use the smoke box check your pellets / chips. Top off or change flavors as needed.

Place the ham on the shelf for 2 hours. It will pick the flavors from the smoke and be the center piece on any table.

Note: Don’t forget to turn the gas off at the tank when you are done.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Louisiana, Green Mountain, Royall, Memphis, Traeger pellet grills, Pacific Living Pizza Oven, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
