Our pizza oven cooks up some mean roasted potatoes the kids go crazy for. They love how crispy the oven makes them. Here’s all you need:
– 2 lbs. red potatoes
– olive oil
– sea salt (optional)
– fresh rosemary
Here’s what you do:
1. Set the outdoor pizza oven to high – let it preheat for at least 20 minutes
2. Prepare the potatoes: coat a dark roasting pan with olive oil, cut the potatoes in 1/4’s and place them in the pan, sprinkle sea salt (optional) as much as desired, and break a healthy amount of rosemary over the potatoes, drizzling olive oil one last time on top. (Note: be generous with the oil – you won’t regret it!)
3. Time to cook them: Place them in your oven and cook for at least 40 minutes, depending on how crispy you want them to be. Just remember to turn the pan every 10 to 15 minutes and stir each time you turn.
4. Take out your potatoes and serve up the smiles!
