Southwestern Cabbage Rolls

Patti’s family emigrated from Eastern Europe and she had fond memories of these cabbage rolls that were called one thing in German and another in Polish. But, Ken being from Texas we made them a little zippier. Patti made them extra easy using an instant brown rice, bottled tomato sauce and some of our favorite southwestern seasonings. Plus, you can put it all together the night before. An added layer of flavor was the Pacific Pellet Northwest Apple we put in the Pacific Living smoke box. Yum.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Pacific Living Outdoor Oven but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood burning stove, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Outdoor Cooking Recipe

Prep Time: 15 minutes
Cook Time: 60 minutes at 375 degrees (190c)
Grill: Pacific Living Outdoor Oven

Pellets: Pacific Pellet Gourmet BBQ Pellet Northwest Apple

Ingredients: Southwestern Cabbage Rolls

  • 1 large head of cabbage, cored
  • 2 lbs. ground sirloin 93/7
  • 1 ½ cups your favorite cooked rice
  • 2 teaspoons Chef of the Future Southwestern seasoning
  • 2 teaspoons chipotle powder
  • 1 Tablespoon minced fresh garlic
  • 1 40oz. jar your favorite pasta sauce
  • 1 10oz. can diced tomatoes with green chilies, undrained

Cooking Directions: Southwestern Cabbage Rolls

Place cabbage cored side down in a large pot of boiling water for 5 minutes. Remove and let cool. Gently separate leaves. In a large bowl mix meat, onion, seasonings and rice. Place ½ cup meat mixture on center of each cabbage leaf. Roll like you would a burrito.

Put each roll seam side down in a 9×13 baking pan in a single layer. In a small bowl mix pasta sauce with undrained tomatoes, pour over cabbage rolls. Cover tightly and bake for 30 minutes, then uncover for remaining 30 minutes at 375 degrees (190c).

Note: The bottom stone and it gets “HOT” so you need to stay right with it or you will burn what your are cooking. I only use heavy cast iron or baking dishes here. For most things I have found that it is better to use the middle shelf. You can use a stone here or not depending on your cook.

About our Recipes

Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
